Healthy and Delicious breakfast with Mushrooms

A healthy breakfast is very important for everyone. No one should skip their breakfast and you should have a heavy breakfast instead of heavy lunch. Many ingredients are there with which you can make healthy and tasty breakfast. One such ingredient is mushrooms. Here is a recipe of poached eggs with tomatoes and mushrooms. It sound simple and one of the most healthy breakfast.


8 large eggs

1 pound assorted mushrooms, sliced

1 tablespoon plus 1 teaspoon olive oil

2 medium tomatoes, each sliced into 4 rounds

2 teaspoons white vinegar

4 slices country bread, toasted

Salt and black pepper

1 ounce Parmesan, shaved

2 tablespoons chopped fresh chives

1 tablespoon fresh thyme leaves


Take a pan and fill it with water. Now add the vinegar and sim the gas and heat. Now take a non-stick pan and heat 1 tsp of olive oil over a medium-high heat. After that, add tomatoes in the pan. Add salt and pepper and just cook for 2 minutes.  Keep it aside.

Then in the same pan cook mushrooms with thyme, salt and pepper. Cook till golden brown. While it is cooking, take a cup and crack 4 eggs in those eggs.


Slowly put the eggs into the water in the pan, and cook for 3 minutes. When you see the yolks in the being runny, remove the yolks with a spoon.

Divide the bread into even halves and spread it with tomatoes, eggs, mushroom, Parmesan cheese and a pinch of salt and pepper. Garnish with chives.
